“Dad really enjoyed working outside. He did things the hard way just because he enjoyed working and for the exercise which came with it. He smiled a lot while he worked.”

 

Oline Veseth Barta smiled, too, as she thought of her father, Mons Veseth, who died a year ago. She remembers how her father became interested in health foods before the idea had caught on extensively as it has now, and how her mother began using whole wheat flour to bake bread. Her father liked boiled potatoes and raised “close to two tons one year when he was past 80 years old.”

 

Mons was very interested in caring for his cattle and keeping them from over-grazing the pastures. Whenever he moved them from one pasture to another, he would tell them, “Welcome to your new happy home.”
